Apple Dumplings & Ice Cream

Mmmmm, these bad boys are baking right now! I pulled the recipe from Pioneer Woman, and she has a ton of really helpful pictures of the step by step assembly of these delicious and low-cal dumplings (hahahahah...right).

Apple Dumplings
From - Pioneer Woman Cooks

2 Granny Smith apples
2 cans crescent rolls
2 sticks butter
1 1/2 cups sugar
1 teaspoons vanilla
cinnamon
1 small can Mountain Dew

Peel and core apples. Cut apples into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

And we also made some homemade ice cream last night to take along. We're headed over to my parents' for Easter dinner and dessert as soon as the dumplings are sufficiently browned.

Happy Easter everyone! We wish we could be there for the Long Easter Egg Hunt - with Kelly pregnant I'm guess it's a pretty small field of competitors and we'd get even more coins and candy :)

Happy Easter! The egg hunt was a no-go this year. Kelly and John weren't able to be there since John was working. With only Steve & Emily, Eric & Christina, and Adrienne, we figured it wouldn't be as much fun and might even end up being lame!! Besides without Scott to rip open Adrienne's bag and re-hide his empty eggs, there would be less entertainment for the "older" adults. I think Steve was the only one disappointed. However, we did have a delicious dinner as usual and enjoyed each other's company. Though Pop-pop was still too sick with his cold to join us, he's feeling much better today.

Oh my lordy, is this really like a whole can of crescent rolls and a whole sick of butter for each apple dumpling? Am I missing something?
